Instructions

Step 1
Preheat the oven to 200 C. Slice the fresh tomatoes and add to a baking dish. Drizzle 1 tbsp of oil and toss salt, pepper and oregano through. Bake for 20 minutes.

Meanwhile boil the pasta, reserve 1 cup of pasta prior to draining.

In a frying pan, add chopped mushrooms and cook for around 10 minutes, then add the shallot. Cook until soft.

Step 4
Add the sun dried tomatoes, all seasonings and tomato purée. Then add pasta, cooking water and fresh herbs. Stir well and squeeze in lemon juice. Add the roasted tomatoes and serve.
