This is a great recipe for meal prep. It also lots of options for eating. Lettuce wraps, salad, sandwich (for a sandwich I suggest you add lettuce, tomato, pickles and maybe even cheese!) on crackers, bagels or toast.
I did the lazy version- barely mash chickpeas, no red onion, no dill, add sprinkle of dried parsley and a tad more mustard. Next time I'll use the food processor, at least for the chickpeas, and I won't skip any ingredients. I'll probably add mayo for a bit more flavor, and maybe relish in place of dill.
