This was a hit! I used chicken thighs instead of breasts, sprinkled the bacon on at the end so it would stay crispy and I sauteed some cherry tomatoes in the bacon grease to add some acidity to break up the cheese. Sooo good. Also, after the initial pressure cook, I did the sear/saute on medium high and used a Whisk to incorporate the cream cheese as it was very lumpy. Once I did that, it all came together nicely. Everyone enjoyed this and it was super easy.
