Instant Pot Crack Chicken Spinach Soup with Cream Cheese and Bacon

It's a little to creamy for me but it was super easy to make and not bad for what it is u throw stuff in a pot for 20 minutes stir and than Done!

Super duper delicious. I did about 5 cups spinach and only 4 oz cream cheese, turned out delicious. Served it with a rice pilaf. 10/10 recommend. Made great leftovers too.

Minus cream cheese for Velveeta add more spinach and use chicken broth

This was a hit! I used chicken thighs instead of breasts, sprinkled the bacon on at the end so it would stay crispy and I sauteed some cherry tomatoes in the bacon grease to add some acidity to break up the cheese. Sooo good. Also, after the initial pressure cook, I did the sear/saute on medium high and used a Whisk to incorporate the cream cheese as it was very lumpy. Once I did that, it all came together nicely. Everyone enjoyed this and it was super easy.

I added 6 cups of spinach. Will make again with more veggies and less cream cheese

Very good, but very cheesy. Would add more water/broth next time.

No pics because it was devoured. I waited to add the bacon until I served and sprinkled sliced green onions on top for a spot of freshness. Will definitely make this a regular meal. Next time, I plan to try adding sun-dried tomatoes for some brightness.

Really couldn't be easier to make. Great for those nights when you just can't be bothered. It was good, but I felt it was VERY salty with the ranch mix added on top of the broth and cheese. In future, I think I'd just skip the ranch mix and chuck in some mixed herbs.

I’d recommend adding more spinach (to your liking) & 1/2 cup more Bone Broth if you don’t like the dryness of the chicken breast.

I added a bit more water. At the end. Just too help it go a little further. Served it over potatoes for my kids.

Had it without bacon and replaced them with grape tomatoes. Loved it!

I think I'd trade out bone broth for just regular chicken broth, but adding a touch of garlic salt made this meal shine.

Too salty. Bacon wrong texture for the rest of the meal.
