I don't use minute rice. I prefer Jasmine or Basmati as thats healthier and cheaper in the long run than minute rice. With that said, I precooked the Jasmine rice in chicken broth til al dente(halfway cooked) than added it to the pan with the beef, salsa, cheese and corn. Did add in about a 1/4-1/2 cup of water. Came out really good. Will definitely go into my dinner rotation.
