Mine looked nothing like the photo; maybe because I used goose fat instead of olive oil? At any rate it tasted great though it didn’t make a sauce. I ended up cutting mine up and having it over rice mixed with fermented black bean sauce; the flavors worked great.
Still not a giant fan of pork chops but this was a great way to use them.
