Delicious!! I didn't have Italian seasoning, so I made my own: used salt, pepper, oregano, basil, thyme, and rosemary all very liberally, with some chili pepper flakes as well. The stuffing was amazing, and the pepper was perfect. I also added a bit of cheese in the stuffing itself.
I made just two peppers and saved the rest of the meat and rice for burritos throughout the week.
