First, I’m a novice cook. It wasn’t easy and took way longer than it says. It resulted in lots of cleanup too. I used plenty of cornstarch but it wasn’t at all crispy. The flavor was nice, but it was a bit oily. I probably should have drained the meat on paper towels.

Sounds like your oil temperature may not have been right. I have that happen if my oil is too hot. Were you using a thermometer to monitor your oil temperature?
