I made homemade pesto (mortal and pestle method) last night for this salad, to have as my lunch the next day. I thought it would taste great, but it just didn't hit the mark. However, it might be different for others who might use store bought pesto or make pesto using a processor (just to keep that in mind if you are wanting to try it out yourself ๐).
I did like the gnocchi but overall I would not recommend this, especially as a substitute for one of your meals (as it was suggested to be a light lunch). At best, if I do make this again with a different type of pesto, I would cater this as a side dish instead of the main course. The garlic breath will be strong with this one! ๐๐
