Save 76 grams for top
Top first shaping, round dough, with 75 grams
Top next 3 folds with 25 grams each
Leave final fold untopped, you flip it over
Once flipped, top with 75 grams reserved cheese
Use a flavorful cheese the colbyjack was too mild
Can be a little more generous with the cheese proportions if using 250 grams
