I eyeball as well. If it's a lot of stuff, I follow the directions all the way through the first time. My Daddy taught me to cup my hand and "guestimate" what would be a teaspoon or tablespoon. People who watch me cook are just bum-fuzzled when I dump herbs or salt in my hand!
