in Sour Cream Chicken Enchilada Casserole (Keto, GF) Recipe

I wanted to prep this meal for my husband to throw in the oven later and I wanted leftovers so I did things differently. I made rice with tomato, corn, and beans. I added the taco seasoning to the rice. This was the base layer in a casserole dish. I then cut 2 boneless skinless chicken breasts into chunks and cooked in skillet. I added the chilis and cooked for a bit. I then added enchilada sauce and broth. I reduced to low and stired in the dairy. I put my chicken mixture onto the rice and Put cheddar cheese on top of that. This was perfect for hubby to just throw in the oven later and we have plenty of leftovers.

Great suggestions. We served it over leftover rice. Loved the flavor and texture
