Another winner! I decided to make this for company - some of my husband's co-workers and one of his bosses and his wife. I know, extremely brave of me! The co-workers weren't the issue. They're young, living on their own far from home (international students), and we have them over quite often. His boss was another story. The entire meal was a big hit, and everyone was still raving about the potatoes Monday morning when Hubs went into work. He came home Monday night and asked when we were having the potatoes again. My trick? I did them in a cast iron frying pan on the BBQ!
Edit: Definitely use the Yukon Gold or similar to your region. I did these again, using a regular table potato, and ended up with something like a mashed hash. Tasty, but not what I was looking for.
