This was delicious! Light, fluffy, yet somewhat pudding like. Next time I’ll put in a touch more hot pepper (I used one serrano but I think maybe 1.5 would have been better). The Tajin gives is a zing at the end. I made a salad as a side dish and everyone dug right in!
