Turned this into a couscous salsa. Used Pearl couscous instead of regular. 1/2 an English cucumber, 1/2 a bell pepper, no chickpeas. The juice of a whole lemon plus a tablespoon, 2Tbs red wine vinegar, and only 1tbs olive oil. Used fresh Basil and mint and a container of crumbled feta cheese. Made a total of 1.75 quarts. I set the original recipe at 8 servings.
