Hi Simon, I would think fresh might be preferable, but dried would be fine. A good general rule of thumb is to substitute one teaspoon of dried herbs for one tablespoon of fresh. Depending on how herby you want it, I would start with half to a teaspoon of each and see how that goes.

Thank you for that Sarah. As I live on my own I would be wasting buying fresh herbs as I'm not sure when I will use them again. Even if I keep them in pots they don't seem to last that long. Thank you.

No worries, Simon! Completely understand and I'm sure it will turn out good with dried herbs. If you ever do find yourself with leftover fresh herbs, bear in mind that you can chop them, put them in a bag and freeze them and use them another time. I do that myself quite often. You can also chop them and put them into ice cube trays topped up with a little water and use them in recipes that way.
