The theory behind this recipe is great - multiple serves of vegetables disguised as a pasta sauce. After trying it a few times though, all I can say is that it's bland and uninspiring. I've tried different roasted vegetables, herbs and spices, but haven't had any luck. It's alright when fresh but not great for leftovers. The issue may be that the cream dilutes the flavours (use much less or try Greek yoghurt instead?), but I'm not planning to try again.
