Instructions
Step 1
Clean and chop your peppers, carrots, tomatoes and onion and place them on a tray, previously lined with parchment paper.
Step 2
Add garlic cloves, season with salt, pepper and olive oil and bake for about 30 mins (180C/360F).
Step 3
Now, add your veggies to a food processor and mix them with some cream.
Step 4
Add your sauce to a pan over medium low heat and simmer for 5 mins.
Step 5
In the meantime, boil some pasta in some salted water, drain and add it to your sauce.
Step 6
Toss well over the heat to combine all the flavours together, adding some pasta water if necessary.
Step 7
Turn the heat off and add your grated Parmigiano cheese and give it a nice last stir.
Step 8
Serve with some extra cheese on top. Buon appetito!
