Delicious! A few variations for us. I only had frozen peas so I grated a carrot instead and added that with the other veggies. I also had a 1/2 punnet of grape tomatoes to use up and fried them with the mushrooms. I also added a small amount of paprika as suggested in another comment and also a tiny bit of cayenne pepper. I used onion powder and replaced brown onion with a 1/2 diced red onion topped on raw which gave it a nice crunch and lots of flavour, then a small topping of mozarella and let that melt in the oven before serving with sour cream and spring onions. It was amazing 😍
