I had to make a few modifications, because I didn't have fire roasted tomatoes or cilantro...and I misread the instructions for cooking the lentils. I put the garlic and onions in the pot with the oil while I rinsed the lentils. Then I added the broth and lentils. That's when I realized that I was supposed to add water, boil, and then let the lentils sit for 20 min. Instead, I added 3 cups of water, brought to a boil, and cut up the celery. I went ahead and put the celery in then. To make up for the tomatoes just being diced, I added a large Jalapeno, a green pepper, a can of coconut milk, and some paprika. I topped it with an avocado. It turned out really well! I may make it this way next time!
