Takes some time and love but it's worth it for the flavor. I made a couple substitutions like onion instead of shallot and marsala instead of white wine which added a nice depth of flavor. It only made about 3 portions of orzo so double that recipe if you want leftovers. There were plenty of meatballs. 1.5 lb of ground chicken would have fit nicely on one sheet but I had another 10 from having an extra .5 lb of ground chicken. One of my favorite parts is the crispy fried sage.
