Five out of five, will definitely repeat this meal! This got top marks from the family. I was a little heavy handed with the spice, but my daughter claimed it was “just enough to give a tingle on the tongue” and my husband declared it “perfect”.
My opinion is that this had delicious flavour (since it’s summer, I went ahead and used the fresh corn on the cob, but I’d definitely try frozen if I made it later in the year), slightly sweet and creamy. The chicken was moist and had a slightly crispy crust that made it really good. I used pecorino Romano cheese because that’s what I had, but it went perfectly.
This would be excellent served with garlic bread, or cheddar chive biscuits (US).
