I airfryed summer squash after roasting it in apple cider vinegar, maple syrup, cinnamon, peanut oil, and pepper. I swapped celery for borage, and used fresh garden sage and thyme. Onions were walking onions. We did add smoked hot Italian sausage, which jerk seitan or soy curls would be also great. Adding walnuts would be good but you don’t need to. I can also see adding feta and olives or just blue cheese and walnuts for a slightly different flavor
