Makes a ton of spring rolls, but they're a fun easy at home lunch. I just packed up the extra veggies and assembled more as needed. Peanut sauce recipe is good. Instructions aren't great on the spring roll wrappers - they should only be underwater for 10 seconds max. Use a cutting board rather than a towel (it shouldn't stick unless it's too wet). I would stack ingredients then re-wet parts of the wrappers with the tips of my fingers as needed when rolling. Good to combine with cocktail shrimp as a protein too.
