We loved this so much! The recipe actually didn't let you click through without registering and signing your life away with a subscription so we used the ingredients to compile it ourselves and it was amazing! We cooked oven baked home made chips, roasting the tomatoes on a separate baking tray at the same time and grilled the fish on the bbq. Once almost ready to serve, I warmed up a small frying pan and added the garlic, ginger and turmeric. I then gradually added the coconut milk and once fully stirred we dropped an entire bag of baby spinach to wilt. We served the fish, layered it with the coconut milk/spinach sauce and topped with roasted tomatoes, the plate was finished with chips on the side. It was sensational!! Definitely making this again.
