Made 22 (i.e. 1.5x of recipe):
360g rolled oats
540mL soy milk
100-120g maple syrup (depending on banana ripeness)
2 tsp ground cinnamon
1.5 tsp baking soda
1 tsp salt
2 tsp vanilla extract
1. Mix in a bowl.
3 long-ish bananas
3 eggs, room temperature
2. In a separate bowl, mash bananas and mix with eggs.
3. Add to oats mixture.
Dried fruit and seeds/nuts of choice (this time used dried cherries and sunflower seeds)
4. Add to mixture.
5. Either oil spray a muffin pan or line, and divide up mixture making sure to fill to the top (muffins do not rise much).
6. Bake at 190C fan-forced for 25 mins.
