Notes for my 6000ft sake (and useless to anyone else but I don't know how to use whisk): Replace white sugar with brown, remove one tablespoon of sugar, add the juice and zest of 1 lemon, teaspoon of cinnamon, 1/8 teaspoon of powdered ginger? use whole wheat pastry flour, add two tablespoons of more flour, use the 1/4th cup of milk. Don't add more than one heaping tablespoon of cinnamon. Reduce leavening to 1/4th baking soda and 1/2 teaspoon baking powder. Maybe try adding tablespoon apple cider vinegar? Or 1/2 cup of vegan buttermilk (measured before microwaving until boiling) instead of 1/4th cup of milk. Use a tablespoon of vinegar for the buttermilk. Remember to mash, not blend. Also roast the bananas at 400 in a dutch oven (higher temps will burn the pot). About 20+ minutes from frozen. Cook at 450 for eight minutes covered with foil, turn down to 375 convection for 10 minutes. Remove foil and blind bake until a toothpick comes out dry in the center (but doughy in other places), cool for 5 minutes, then take it out of the pan and cool for forty (do not cut it). EDIT: Try these: Use 2x bananas, roast covered till bubbling, then uncovered until liquid is gone. Use 1 3/4 cup of boiling vegan buttermilk Cream the sugar with the wet ingredients, Not the dry. Use 1/8 baking powder and 1/8 soda Rest the filled load pan in the fridge for a few hours Start on 480 degrees for ten minutes, then remove foil and turn down to 400. Chop nuts very finely.
