This makes a really nice change from sponge/brownie type tray-bakes. I didn’t have passionfruit curd so I used lemon which worked perfectly well. Also, I used tinned peaches (in juice not syrup) that I dried off first with kitchen paper, so as not to make the recipe soggy. They worked brilliantly and would definitely use them again. I also added a handful of raspberries which where a great addition. It’s a good recipe to use up any leftover fruit and berries.
