I’ve made many different lightened up waffle recipes, and this is my fave because of the texture (crisp outside fluffy inside) and because they have some protein.   For flour I used half 1:1 GF + half regular white.   I also added an additional 1/2 cup oat flour because my batter was too runny.  However, when i poured the final batter out, I realized the reason it was originally too runny was  because a lot of flour was stuck in the bottom 4 corners of the blender.   This happened despite pre-blending all the liquid stuff first, despite having a Vitamix, and despite scraping down sides a couple of times.  I did add a couple of Tbs of maple syrup to the batter to sweeten a little.  I will definitely make again, but I will forgo blender and just mix by hand.  My toddlers like them too.  And they do great being frozen then reheated in toaster.
