The bigger pieces of carrot were still somewhat crunchy so I'm not sure if I should've just used baby carrots so I didn't have to cut them into basically half-circles, or if I should have just increased the time or temperature. Either way, the only complaint my son and I had were the crunchy carrots🥕 Oh and I don't believe it was in the recipe but I did add paprika as well and intended to roast some tofu as well but didn't have room on the baking sheet.
