Read online reviews and made the rice separately from the chicken. We also cubed our chicken. We felt there was a lot of moisture in the dish that may have prevented the rice from burning (common complaint from others). We used two large zucchinis, 1 large onion, and half a medium onion because we were making four servings.
We also lowered the temperature to about 375-400 so the chicken wouldn't dry out (the second complaint from others).
This tasted excellent without the peppers, but next time will add to see what they add to the flavour. Had trouble finding them at the supermarket.
The parmesan cheese as a garnish really made the dish for us.
