absolutely delish!! i couldn’t find guajillo chiles at my store so i used ancho chiles instead- they looked similar and i can’t really taste the difference, and also used mexican puya chiles. i also used two chiles de arbol and the spice level turned out perfectly!! we’re korean, so we love spicy. i forgot to let the meat rest for 20 minutes after venting, but it was still so so good and soft! so yummy- 100% will be making again! i also found that flour tortillas hold better when wet, but maybe i just needed better quality corn tortillas.

My daughter made tortillas too! She said it was not hard, we got a press for $1.50 from the thrift store!!
