This is an indulgence meal for us. Which sounds weird, I know. I make this with a lot of veg. Usually bok choy, carrots, bell pepper, mushrooms, onions, sometimes water chestnuts or snap peas for extra crunch. I double or usually triple the sauce. It takes quite awhile to prep and cook the veg, which is why this becomes an indulgence meal. With chronic pain and fatigue issues while also teaching and maintaining the house (dishes!!) this meal just takes time and love I don't often have. It's soooo worth the effort when I have the energy make it, though.
