This came out creamy and delicious. Added a little chipotle powder into the cheese sauce on top. Added the minced garlic and chili pepper flakes in with the mushrooms, after they had browned, and sauteed for a minute before adding a splash of soy sauce/ liquid aminos and then added the spinach to wilt. I used better than bouillon broth paste in the cauliflower mix, and so was able to finish off the can of coconut milk and just add less water.
