This was perfectly delicious- a pink, creamy, not too heavy, gorgeous dish. The large amount of fresh basil really makes it pop! Such a fresh, easy dinner. I did pop the tomatoes & basil & olive oil into the food processor to make it smooth & creamy. I would also make it the other way - just a bit more rustic without food processor. Whole family loved it! ( I also roasted the tomatoes at 425 and cut oven time to about 45 minutes.
