so it makes a LOT of filling. i only got "average sized" zucchini at the grocery store and i had enough filling leftover to probably fill another 3-4. thankfully though the filling is delicious, so i just scooped the rest into a bowl and ate it with sour cream while waiting for the zuccs to bake lmao. added 4 cloves of garlic bc duh, made vegan sans the corn so i used a whole onion and put some vegan cheddar on top. 💯💯💯
