Great meatless Friday meal! Super easy make and clean up. The recipe didn’t say what type of lentils (first time cook with lentils for me) and I read that red lentils are good for soups. It made a mash-like filling which we enjoyed; I think it gave a hearty feel that sometimes you don’t get with thin soups. This will be a regular Friday dish for us, especially in Lent! Yum!
