So here are my thoughts and what I did to make (my intention was going to b making 12 servings lol only bcuz when I purchase my chicken they don’t have “just 2”) but, changed my mind I thought if I made for 8 servings used the ingredients for this size (few modifications) it wouldn’t b as “soupy” as I previously read about)
O and added 15.5 oz of can black beans
Pretty much followed the recipe EXCEPT…(by accident) bought creamed corn (15 oz can)& 2 cans of the diced tomatoes n peppers
Pretty much followed the recipe EXCEPT…(by accident) bought creamed corn (15 oz can) and used it , yes, including the cream it had corn starch so I figured it would “thicken up” which it did! 3 chicken breasts, a heaping tablespoon of chili powder, and 3/4 of a tablespoon (wasn’t sure if it would b too much, prob next time will use 1 tablespoon) of Adobo seasoning and just shy of a 1.5 cups of broth (used low sodium), and just the 8 oz of whipped cream cheese)
It definitely had that “after” kick and if the manchild likes it who am I to judge.. he definitely has a spicier palette than myself ..lol
Each bowl was filled w chicken and very hearty and would work again on a winter evening
The shredded cheese..meh.. to b honest really didn’t need
So in conclusion, would o make again..yes
