Either a little less vinegar or use red wine. I had a sirloin tip roast, which probably could have cooked for slightly less time. Didn't have many veggies on hand, added canned corn and peas at end during thickening. Did have onion, garlic and carrot. I combined some other pot roast ideas, rolled meat in ranch dressing mix and flavored pepper. It tasted really good and we can't wait to try it after it sits for a day.
