Lovely curry and really enjoyed it.
I don’t have a food processor at the moment (as I have just moved) so I swapped the tomato’s for chopped sauce tomatoes, and then added some freshly chopped ones, to still achieve a saucy texture. (In future I would only add the chopped sauce tomatoes and not include fresh ones just to reduce the tomato flavour down a bit).
As I follow a low FODMAP diet I made the following alterations:
- crushed garlic (removed at the very end) so the flavour is in there
- Peppers, Aubergine and carrots instead of onion and to make it more healthy (with asafoetida seasoning)
- some tablespoons of ground almonds - for thickening
- grinds of salt for added flavour
- turmeric added to the rice - for extra flavour and health
