This was incredibly moist and guests couldn't believe it was homeade! My goal was to find a recipe for red velvet cake that didn't call for food coloring. This didn't get very red, but could be from the dark cocoa I chose to use. I als used a can of sliced beets, drained rather than fresh beets. I am considering trying pickled beets as an experiment next time since the recipe contains vinegar and may bring more color. I frosted this with my go to Rita's Whipped Topping.
