The kid really liked this. I will definitely make this again. I did the slow cooker version and had to make some adjustments.
Didn't have red potatoes so I used white. I chopped and added to the slow cooker. I added seasoning (garlic powder, Sason, onion powder) and a teaspoon of olive oil. Stirred around to coat.
Used boneless skinless chicken thighs (they were on sale :) ). Trimmed the fat and seasoned the chicken (Montreal chicken seasoning, cumin, Lawry's) and mixed it in.
Added in knockoff grated Parmesan and mixed well.
Cooked for 3 hours in the slow cooker on high. I stirred this halfway thru.
I also didn't have parmesan for the topping and used store brand white queso shredded cheese instead.
