After seasoning and browning the meat on sauté in an instant pot, add the onions and apples and stir. Add apple cider and stir to get the browned bits off the bottom of the pan. Add the rosemary and put the lid on. After it is finished cooking, remove the pork and cover with foil. Blend everything else together in a blender until smooth. Pour back into instant pot and season with salt and pepper.
Make mashed potatoes and serve with the pork and gravy.
