I really liked this! I tripled the recipe, and added chicken and 2 cans of diced tomatoes. It was a little soupy at first, so maybe I should have let it cook longer or just let it sit for a few min after done cooking. By the time my husband got home and ate it (about an hour after the rest of the family), it was no longer soupy. I will definitely make sure to use vegan cream cheese (or cashew butter) next time, because normal cream cheese upset my stomach.
