I was very sceptical as I had to take a few liberties with this recipe..at one point, I thought we might need to stick on a pizza for dinner. Firstly I couldn't get fire roasted tomatoes. I added half tsp of smoked paprika to regular tinned tomatoes to get a little smokiness. A full tsp would have been better. Also couldn't get red wine vinegar so used sherry vinegar. Also, I wanted a bit more spice so added some chipotle chilli flakes for smoke and spice.
Mine needed 1hr 40 but it came together. Overall, a little sweet for me but my husband really liked it. It will be interesting to see if the flavour develops deeper when we have the leftovers tomorrow.
