Used as a template for my own recipe:
Pork Lentil Curry
1 tablespoon olive oil
1 lb pork, cut into bite sized pieces
1/2 jar green curry paste
1/2 onion sautéed
4 oz chopped green chiles
1 tablespoon vinegar
1 garlic clove
1 teaspoon curry powder
1 teaspoon salt
1 cp lentils
3.75 cup water
Sauté onion, chiles, pork, garlic, and spices for 5 minutes or until you get a light sear on some pieces of meat and the onions have softened.
Add lentils and water and pressure cook for 18 minutes, natural release.
Serve on rice or quinoa.
