I'll definitely make this again, but I don't think I'll bother with the gravy next time. I had boneless skinless chicken, which didn't quite spend enough time in the instant pot to fully break down the fat, so there was goopy fat globs in the finished gravy which I found kind of off putting. The seasoned and juicy chicken doesn't need gravy anyway.
