I made a few changes:
- had to add about 100ml extra water when kneading, as it was a very hard, tough dough otherwise. It probably could have done with more
- proofed for 3 hours, then rested another 2 hours after knocking back. Blame the cold scottish climate for that.
- didn't bother with the egg wash as it was 11pm
- added some cumin seeds
Overall its fine as a healthy everyday bread, the seeds are a nice addition. It's very dense, which is probably not to everyone's taste. I wouldn't bake it as a showstopper or addition to a dinner party
