This is even better if you substitute shallot for the onion. I also found that for easier prep, using prepacked coleslaw mix without the sauce works good. That way you get red and green cabbage plus carrot pre-prepped. The peppers are also optional! I’m picky, so I leave them out and it doesn’t affect the base flavor at all.
