This was super fresh and super easy to put together. There were several items I didn't have on hand but still made a tasty, quick dinner. I didn't have avocados, mint, pepitos, or edamame. I subbed in pistachios and it was a perfect sub. I used a dash of Blood orange EVOO, Meyer lemon EVOO, and Pomegranate EVOO with some rice vinegar, salt and dried mint. That was delicious. Fresh mint would add a lot for the flavors in the salad, and I'll make sure to have it for the next time!!
